3 Easy Go To Dinners

Every now and then I hit a slump when it comes to meal planning and cooking dinners. When that happens I love to look back at recipes that are tried and true favorites (AND incredibly easy) and make something from that list in order to get the spark back. It almost always helps and I’m excited to share three of those with you!

CRUNCHY ROLL BOWL, PINCH OF YUM

I can’t tell you how easy and delicious this meal is. I love to shortcut by buying preshredded carrots and then using the Trader Joe’s soyaki as well as a spicy mayo (just mayo with sriracha to desired spice level). We usually do cucumber plus edamame if we have it. So much protein and so easy to have prepped for a few days. It’s delicious!

WHITE CHICKEN CHILI, SHAUNA NIEQUIST

This is almost too simple to even really be considered a recipe but it’s truly a “throw it all in” kind of recipe. I love to use half of a rotisserie chicken and save the other half for another recipe OR use the whole chicken and double everything else. Freezes beautifully in souper cubes to enjoy later too.

I found this recipe on pinterest…8 years ago? And we have made it SO MANY TIMES since then. We have our own spin (no cream cheese, usually add corn and/or bell pepper) and it’s definitely a winner. I love that you assemble and then bake them all at once which definitely cuts down on prep time.
