a week of dinners (9/4-9/10)

I know that I’m feeling more settled after moving because I’m more willing to try new recipes and make more involved dinners than I have for the last few months. I try to only pick recipes that will give enough for leftovers for lunch and aim to have at least one night a week where dinner is 100% leftovers. This obviously shifts depending on the season of life we are in but for now, it’s been fun to be cooking again. Here’s a roundup of our dinners from the past week!


CHEESY WHITE BEAN TOMATO BAKE - such a simple and nourishing dish! This is actually the second time we’ve made it - this time we added a diced onion as well as a bell pepper. Bump up the tomato paste and give it a bit more seasoning. So delicious on crusty bread.

INSTANT POT ALOO GOBI - In hindsight, I don’t know how necessary the instant pot truly was for this recipe. I liked it enough but it wasn’t my favorite thing I’ve ever made and it didn’t make a TON. I generally like to have more leftovers if I’m making the effort so TBD on this one. Store bought naan tucked away in the freezer was perfect to pop in the toaster to round out the meal.

PASTA WITH SAUSAGE, KALE, AND CHICKPEAS - Okay I LOVED this recipe and it is absolutely going into our regular rotation. A few of the comments mentioned scaling back the pasta and I’d either do that slightly or add a second can of chickpeas. We subbed kale for the broccoli rabe and I added a splash of milk at the end. So, SO good and I found myself looking forward to the leftovers as well. This makes a TON.

SHEETPAN BEEF AND BROCCOLI - This was…fine? I also found the blog post to make rather disparaging comments so I’m choosing not to link it. You could find anything similar with a quick google search! It was nice to make something different, not sure that I’ll remake it anytime soon.

TURKEY CHILI AND BISCUITS - I forgot to snap a picture of it dished up so you get this even lower quality picture of it half gone in the dutch oven. I love, LOVE this recipe and is one we make on repeat. I was so skeptical when my husband first made it (I firmly believe all chili needs fritos) but it is truly delicious.
